Chicken Tacos

For my first meal of my very low calorie diet (VLCD) challenge, I made chicken tacos which took me under 10 minutes and is around 230 kcal for 2 tacos. Of course, I would normally eat more than this so feel free to make more!

Ingredients
15 cherry tomatoes
40 g cucumbers
4 jalapeno peppers
4 iceberg lettuce leaves
100 g chicken breast
4 taco shells (I used Old El Paso Crunchy Taco Shells as I couldn't find other brands)
Lemon
Serves: 2
* I recommend that you add a salad on the side as I would normally eat more than this.
Method
Poach chicken breast for 5 minutes or until chicken is no longer pink. Remove from pot and let cool for a few minutes.
Shred the chicken into thin slices using either two forks or with your fingers once it is cool enough to handle.
Preheat oven to 180˚C. Place taco shells open end down in the oven and heat for 2-3 minutes.
Dice the tomatoes, cucumbers and jalapeno peppers. Shred the iceberg lettuce leaves.
Mix all ingredients together, squeeze a bit of lemon and season with salt and pepper.
Remove tacos from oven and place the filling into taco shells.
